Restaurant Verbena excels in providing fresh, hearty and contemporary cuisine. That being said, start off with the organic mozzarella cheese pot, which is served in similar fashion to a fondue. Accompanied by warm focaccia bread, the pot of sumptuous cheese, fresh herbs from Tagaytay and exuberant tomatoes, this dish is a great starter. Follow it up with the pan-roasted foie gras that is well complemented with the Pedro Ximenez sherry vinegar.

The sweetness of the sherry vinegar, produced in Spain, balances the potent foie gras. For the salads, the herb-marinated mushrooms with organic arugula is spectacular. Dressed with honey-garlic vinaigrette and shaved fresh Parmesan, it is quite refreshing. For the main course, do not miss out on the invigorating pan-roasted seafood composed of Chilean sea bass, salmon, snapper, prawns and served with gingered pumpkin purée, brown butter sauce and pilaf rice. For meat lovers, the superbly succulent grilled US rib eye steak is a winner.
