Referred to by most Ilocanos as "chicharon" (different from the pork rind chicharon found all over the Philippines), the bagnet is nothing but pure pork belly heaven. Bagnet is seasoned pork belly deep fried twice to crispy perfection. It is similar to the Lechon Kawali (deep fried pork) but has the crisp and flavor of Crispy Pata (deep fried pork leg). You can have a taste of bagnet in almost every restaurant in Ilocos, but the real rustic bagnet (available as big slabs of meat!) can be purchased at the local public markets.
